Basic Buns

For 12 servings:

warm up 200ml milk, 100ml water and 30g butter to slightly warmer than body temperature

mix 500g flour (optional proportion: 275g white flour, 125g wholegrain flour, 50g barley and 50g rye), 5g yeast, 8g salt and 15g sugar in a mixing bowl (optional spices: cinnamon, nutmeg, rosemary, thyme, dry ginger…)

add the liquid into the dry mixture, then add in an egg (for optional toppings, save 1/8 egg), mix thoroughly until it forms a slightly wet dough, put the wet dough into slightly warmer than body temperature oven to rest for 1 to 2 hours

knead dough on a floured surface for around 8 min until it becomes smooth and elastic, divide the dough into 12 equal pieces, shape them into balls, put them on baking papers and flatten them slightly, let them rest for another 10 to 15 min in warm environment

optional toppings: brush the top of buns with the rest of the egg, drizzle desired decorations on the top (i.e. sesame, poppy seed, oatmeal, sunflower seed, pumpkin seed…)

bake them in 200C preheated oven for 10 to 12 min til the buns become golden
