Fiddlehead Salad

It’s spring time! Good weather for grill, but some green is missing from the menu? Nature will hook you up with some – fiddlehead fern (also called ostrich fern, or strutseving in Norwegian).

Wash the fiddlehead carefully off all the sand, dirt and their own brown-yellow shells.

Steam them for 15-20 minutes

Mince some garlic and ginger, and then fry them slightly in hot oil.

Mix the fiddleheads with soya sauce, brown chinese vinegar, some spicy sauce, a small squeeze of honey and the garlic-ginger oil. Keep tasting.

Drizzle seasame seeds on top before serving.
